Oh my god, so much better than my non-vegan bread!
AND, you don't need like soy products or flax seed and stuff that people normally DON'T have. (like me)
plus it's so freaking easy to make and sooo good.
Banana Nut Bread
Ingredients (use vegan versions):
3 ripe bananas
2 tablespoons olive oil (other oil like canola is fine, this is the healthiest)
1 1/2 cups flour
1/2 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup coarsely chopped walnuts (if you want)
1/2 cup applesauce (if you need it to be more moist, optional though)
Preheat the oven to 350 degrees. Grease a loaf pan. Mix the mashed
bananas and oil in a large bowl. Stir in the flour, vegan sugar, salt,
and baking soda. Mix in the nuts. Pour the well blended batter into
the greased pan and bake for one hour. Remove and let cool.
I found this recipe works better than many I've tried since it sticks
together much better, and is healthier for you since it doesn't
require shortening and a lot of oil. Any oil will suffice howe'ver
olive oil is the healthiest!
Serves: 1 Loaf
Preparation time: 1 hour
I made 2 loaves in the past 2 days...One i had 3 bananas and used no applesauce=good.
The other one I used 2 bananas (no more left in the bushel) and used applesauce = amazing. You could probably use 3 + applesauce and it will still be amazing.
